Leek Cake




This is one of my favourite foods to make for everyone at home, when they're hungry and have nothing to eat. Its easy and quick to make and it tastes delicious. I came up with this recipe when I had very few ingredients left in the fridge, and was trying figure out what I can make without needing to go to the supermarket (one of those lazy days)... Its great as a little sandwich on toast, baguette, tortilla or pita bread, can be taken to school, work or a quick bite anywhere ...





Leek Cake Recipe

What You'll Need:

- 1 whole Leek
- 1 Bunch Green Onions; cut off the white part,wash the green top of the green onion,drain and chop finely.
Large Handful spinach; separate the stem and chop finely.

- Handful Parsley; separate the stem and chop finely.
- 1 Tomato; wash and dice ( about 1/2 inch squares )
- 2 Eggs
- ⅓ Cup Crushed Walnuts
- 4 tbsp Oil (add more if necessary)
- 1 tsp Salt
- ½ tsp Fresh Ground Pepper
- A Pinch of Red Pepper
- 1 tsp turmeric 
- A Pinch of Black Cumin Powder
- A Pinch of Cinnamon Powder



Directions:

1. In a 10" non-stick pan heat the oil on medium-low heat.
2. In a large bowl, mix all the ingredients together. (you can use a wooden spoon to mix or your hands if that's more comfortable)
3. Once the oil is heated, pour the mixed ingredients into the pan and flatten.
4. Cover it with a cloth (or paper tower) over the lid. 
5. Cook for 7 minutes on one side.
6. Uncover and slice it anyway you'd like ( diagonally into triangles or cut them into squares ), and turn them onto the other side and let this side cook for another 7 minutes.
* The 7 minutes on each side should be enough, but test and cook them longer it needed!
7. Serve and Enjoy
