Sunny Side Up Tortilla Sculpture




My joy in cooking is not just the taste, but the look and presentation of a dish. Since I have such love for it, my mind is constantly trying to think of new ways to present a dish and sometimes when something pops into my head I have to make it quickly and see how it works. 

This is one of those situations, where I thought about how I could play with a tortilla bread and this came to mind. I placed some stones and made the bread look sculptural. As if it was waterfall coming down the stones and placed it in the oven so the shape would stay as is. 


The tortilla Bread is definitely the highlight for me in this dish, but the whole thing was a winner for my family as they really enjoyed the look and taste of it.


 We enjoyed our breakfast with a freshly squeezed Grapefruit and Orange juice and some Coffee ;)


Sunny Side Up Tortilla Sculpture Recipe

Serves: 1-2   Prep Time: 10 minutes    Cook Time: 10-15 Minutes

Ingredients
  • 1 Whole Wheat Tortilla Bread
  • 1 Egg 
  • 1 tbsp Butter
  • 3 Tomatoes (Chopped)
  • 5 Cherry Tomatoes
  • 6 Baby Spinach Leaves
  • ½ Avocado (Sliced of Chopped)
  • 1 Radish (Sliced-Optional)
  • A pinch of chilli Flakes
  • A pinch Salt
  • A pinch Black Pepper
  • Lemon Juice
  • Basil (For garnish)
Directions

  1. Preheat oven to 300 degree. 
  2. Shape you tortilla bread and place it in the oven for a few minutes. Keep an eye on it so it doesn’t burn from the sides. Take it out when you have nice golden edges and a crispy tortilla.
  3. Chop your tomatoes, place it in a pan with butter.
  4. Add salt and black pepper to the tomatoes.
  5. Once the tomatoes are soft and cooked, add a few drops of lemon juice and the chopped cherry tomatoes into the sauce. Stir it for a few seconds.
  6. Open a circle in the middle of the tomatoes on the pan and crack the egg onto the middle. 
  7. Add Chilli Flakes and salt to the egg and place the spinach onto the tomato sauce.
  8. Allow the egg to cook.
  9. Place the tomato sauce as the base layer onto the tortilla Bread.
  10. place the sunny side up egg onto the base layer and add some more of the sauce to the sides.
  11. Place the radish and basil as garnish on the dish and add the chopped or sliced avocado to the side.
  12. Serve and Enjoy.
